Almost. +++ 💸 Ingredients (for 3 mini Pavlovas)u2028• 70 g egg whiteu2028• 70 g caster sugaru2028• 70 g powdered sugaru2028• 1 tsp lemon juiceu2028• 1 tsp cornstarch • 350 g strawberriesu2028• 25 g lemon juiceu2028• 15 g sugar • 200 g heavy creamu2028• 15 g powdered sugaru2028• Seeds of ½ vanilla pod 🥄 What happens Warm egg white + sugar + lemon to 45 °C over a water bath. Whip until stiff and glossy. Fold in (sifted) powdered sugar + cornstarch. Shape into three little crowns, each with a gentle hollow in the centre, like they’re waiting for something. Bake 90 min at 100 °C, let cool in the oven. Macerate strawberries with lemon juice + sugar (15 min). Whip cream with vanilla and sugar until soft peaks form. Fill, spoon, scatter.
